Boujee Bagels opens in BP

“I’m exhausted," exclaimed new restaurant owner Trisha Tietje.
“I think we had a good day,” said her partner/daughter, Alaris McCord.
The two opened Blooming Prairie’s newest business, Boujee Bagels & Coffee Co., last Wednesday.
“We were overdue in getting another coffee shop,” said Roger Sorenson, one of the day’s first customers.
The store, located in the former Subway restaurant, will be open 6 a.m. to 6 p.m., five days a week, and from 8 a.m. to 4 p.m. on Saturdays. Coffee will be a big draw, at only $1.79 a cup, and Boujee Bagels & Coffee Co. offers New York style bagels, gourmet specialty donuts, breakfast sandwiches, soups and salads, and more. Drinks include hand-crafted sodas, coolers, and espresso mocktails.
For dessert, young customers can lobby mom and dad for some hand-dipped Bridgeman’s ice cream.
Boujee Bagels & Coffee Co. also prides itself on making smoothies with 100 percent fruit juice. There is no added sugar, no artificial flavoring, no added colors, and no preservatives.
Tietje is not new to the business world. She formerly managed the Austin Pizza Ranch. McCord “wants to be her own person,” said Tietje, complimenting her management skills.
Trisha’s husband, John, is the store customer service magnet. He can be seen and heard greeting Boujee’s customers.
