Mindful Fork celebrates a year of success

How does a fully prepared and healthy meal delivered straight to your doorstep sound? 
When Regan West and Beth Wall put their minds together over a year ago to create Mindful Fork, they changed the way hundreds of Steele County residents eat meals each week.
Their idea was that so many people (especially parents) have such busy schedules that they are not taking the time to think out healthy meals. Instead, more and more people are eating fast food. 
West and Wall decided to create a system where meals are created in mass quantities, broken into proportions, delivered to homes and the individual heats up for meal time and enjoy the homemade and healthy meal. They also have a pick up location at Curly Girlz Candy in Medford. 
“If this already existed, we wouldn’t have created Mindful Fork,” laughed Wall. 
 They started out last February by only taking on ten families. From there, they slowly grew. “We wanted to grow conservatively,” said West. “We just didn’t want more than we could handle.”
Now Mindful Fork prepares well over 600 meals per week out of the kitchen at Camp Pillsbury. 
The current menu allows for up to three different meals per week. The food is prepped on Sunday. On Monday, they cook. On Tuesday, the meals are packaged and delivered in temperature safe coolers. 
West explained that they are starting up three new lines of meals: conscious cuisine, out-of-box lunch and the athlete pack. 
Since many people like to make meals for people going through a hard time, Mindful Fork selects one family per month to match a gift up to $100. 
As far as business goes, West and Wall say that they are happy with the success. “We have such a good time. It’s just fun,” said Wall. “We have a great staff.” 
While their top customers are young families, they have been surprised by the amount of young single people that enjoy the simplicity of having their meals delivered. “I mean, it makes sense. It is tough to cook just for one person—yourself,” said Wall. 
Mindful Fork is celebrating their one year anniversary with an open house on Feb. 24 from 4 p.m. to 7 p.m. There will be samples and fun at the open house. 
“This is a really good opportunity for someone to learn about us and try the food,” said Wall. “It’s not high pressure at all.” 
On Feb. 25, they will be having an official ribbon cutting ceremony at 9 a.m.
